Add script to replace umlauts to model + make README more detailed

  • Add a Python script to Model1 which will automatically sanitize umlauts in the Address column.
  • Make some opinionated changes to the README to make it easier to follow for QGIS beginners like me.
  • Revert data.csv back to format containing umlauts, to have something to demo the umlaut sanitization on.
